I’m wondering, if there is an easy way to change / add the overall led color. There are different colors available via the led key, but not a plain white illumination. Is there an easy way to change this in the UI besides reprogramming all keys manually?

There is no way to do that in Chrysalis currently. There’s work in progress that makes it easier to assign a color to multiple keys easier, but it’s neither finished nor merged yet.

For now, your two options are manually assigning the desired colors, or using customized firmware.
